H-K-J's 4th stacked and milled cheddar

I don't know why, it seem's like there are a few cheddar experiments happening on the forum lately,
I decided to make another cheddar yesterday only this time I used store H/P milk and cream,
everything is basically the same as the one I made last week except for the milk and that I only used 1/2 tsp. of annatto this time,
it doesn't hurt yer eyes when you look at it :o
I did have some curd fracture during the cooking period and the curd seemed dryer than last weeks.
after the first light press (a little over 1 lb/sq inch) the cheese looked as if it would never knit together.
after the second press, I knew it wasn't going to come together :-\
the third and forth made me feel better, after the overnight I was smilin ;D
and the finale press w/o cheesecloth, I do believe I can live with the result
so one more ageing in the cool room. 8)

Please tell me those aren't Chippendale chairs that you have your press on?  If so I have to scold you because the chairs don't do justice to your beautiful press :D

Hi John, the chairs and table were my great Grandparents, I don't know these chip and Dale people so I am pretty sure these aint there's
and the press was a kick in the butt to make ^-^

H-K-J I checked out your blogspot and if any members of this forum haven't visited it they are in for a treat if they do.  Please put a link in your signature because there is so much good stuff there.  My only question is how do you get those excellent pictures?  Something tells me your wife is in on it :).

Don't understand whats going on in my cool room. I have started to get some molds I am not partial to.
I went ahead and brushed this down and vacuum bagged it.

I thought I was seeing whey inside the vacuum bag so I opened it aired it for awhile then re-bagged.
there was a little, not enough to worry about,  this cheese is smelling wonderful
I forgot the pix but you have seen it before  ::)

had to unbag this again :-\ had some more whey in there, so letting it air out and drying the rind again.
then bagit and back to the cave.
this guy is only 3 months old (damn) :P
