You are tough on yourself. I don't know what your cheeses taste like but if they taste anything like they look I'd be proud of myself. I've have bought cheese in stores with bigger air holes than you have.

Stain -
I made a jack cheese last night that made some awsome squeeky cheese curds. Really simple recipe to I think it's almost the same as posted in the recipe section.
