that is a beautiful Gorgonzola!! I nave seen this recipe often and always think I gotta do this!!

Hi H-K-J,

The taste is perfect for me. I cut this one at 7 weeks, and that's about as long as I'd want to let one go for my tastes. For the one I'm making right now, I think I'll cut it at 6 weeks. It'll be interesting to see if there is a significant difference in mold development.

After cutting, I vac bag pieces, and it still seems to develop more of the bite I associate with blues as it ages.

I dunno, can you stand looking at a naked cheese without a fur coat?  ;)
