looking for a new cheese to make

I would like your thoughts on which cheese to make. Maybe something sharp? Cheddar like but does not have to be cheddar.
I will be using raw goats milk.
Hopefully you can direct me to a recipe for your selection.

Do you know what the fat % is of your milk? My girls have really high fat milk, over 6%, because they are at the end of lactation, which makes a great cheddar, or tomme, or blue.
