Weither  I milk 5 cows or 10..looking at animals on grass, preferabbly Canadien cows, looking at butter, & cheese, seasonally, this is what i'd seen in Normandie, Brittiany, Gurnsey & Jersey...Small scale, producing somthing different, not really elaborate..but simple, if it has to be aged Cheddar that people like, minus the barn smeels that some cheese has...bravo, but thats my goal, the barn looking at pail milkers, cows in box stalls, feeding baled hay grass pasture 7 minor grain ration, consisting of either hammer milled grains or sprouted grains( easier to digest) whst the sense in trying to compete with euro cheese as is comming in trade deals, or big buisness Ie Kraft, Overall not trying to get rich but sustainable, cover my costs & comply with regs for enviro & public safty, which is why i'd stay out of raw milk, raw milk cheddar another possibility, but one step at a time.
