How Do You Pierce a Cambozola?
« on: February 17, 2015, 07:41:57 PM »
Making some small, 5 1/8", cambozolas and got to wondering.  How do you pierce these when you make them and how successful is your piercing?  I've seen it done top to bottom and sideways.  I even tried injecting air into the center of the cheese with a meat injector.  Bottom line is that these are supposed to have a layer of blue in the center so what's the best way to get it there?  Haven't done these yet, way too early, but would love to hear what everyone else is doing.  I would think doing a single line around the side would be best.  Anyone have anything on that?
