Recipe Clarification Question - Maintain Temperature?

I listed the beginning of the mozzarella cheese recipe below.  When the recipe says:

"Ripen the milk for 45-60 minutes"

and does not list a temp, ids this intended to be the last temp listed, in this case 90 deg F or should it just be left to drop on its own?  The reason for the question, is some cases a temp is listed over time.

Mozzarella Cheese Making Recipe

Directions
1  Heat the milk to 90 F / 32.5 C.
2  Add 2 oz. thermophilic culture.
3  Ripen the milk for 45-60 minutes.
4  Dissolve the 1/2 tab rennet into 4 tablespoons water and then stir into the milk for at least 5 5  minutes to ensure even distribution.
6  Let the milk set for 60 minutes.

I always maintain the target milk temp during the ripening process.

Me too. I either have a double pot set up and every 15-30 mins empty the water from the first pot and refill it with hot water that's 10-20 degrees above target, or I turn on the heat and make sure the temp is ok.

I've found that larger batches or insulated containers keep the target temp within 2 F without heating.

I 'third' the thought, and use a system much like Linuxboy.
