made a mistake

I was making a Stilton following the recipe in 200 easy cheeses.
I am using raw goat milk from my own goats.
I did not realize that I forgot to add the cream until the very second i added the rennet.
Well I added it anyway. Got nice curds. i will continue as usual.
Will see what it is in about 2 months.

As long as it didn't drop the temperature too much it shouldn't make a difference.

Don't think it dropped the temp but it certainly raised the PH level
