And from DairyConnection, I use the 2oz Single strength veal rennet..
I use it at the rate of .25tsp/gallon.

Well,if you only use 1/4 teaspoon single strength,then I can't blame it on not using enough rennet! ;D

My rennet pointers

  • You want to make sure it is diluted at the rate of 40:1
  • you want to use just barely enough.  Do not over apply.
  • Use cool distilled water
