Another young Butterkäse

Opened a Butterkäse from 11 february 2015.


Once again I was surprised how flavorfull this cheese is after this short ripening time.

It's a bit embarrasing to admit... The oldest butterkäse I have made was gone after around two months of ageing...


I think I like cheese to age a bit but my wife like the cheese to be mild...


I would guess that it's peaking after around two months of ageing. One of the characteristics of this cheese is after all the short ripening.

Just tended my cheeses for the day and gave my failed Butterkäse a good healthy drink of fine cognac.  Misted it completely and put it into the cave to age a bit.
