« on: April 25, 2015, 07:58:46 PM »
Some time ago I saw some suggestions for ripening containers for tall blue cheese---like eight to ten inch-----can't seem to find it now----and having trouble finding a suitable container------any suggestions?

I know this might sound a like a bit wierd but - do you have any Cake decorators near you?  If you do then their bulk Fondant comes in wonderfully large food safe plastic buckets with a very tight lids.  My wife is a professional cake decorator and I'm never short of brine and maturing containers.  I'm even collecting some for smaller round cheese as molds as they sit nicely inside each other without going all th eway to the bottom so flipping large bries or Reblochon style is easy with no fear of breaking.  Though you might have to spent a while with a soldering iron or something to put hole in then for drainage.  But for brine and tall cheese ripening - perfect.
