Ok,so if it improves curd size and texture when using store bought milk,should it be used in any recipe if you use store bought milk,or just certain recipes?Could this be why my curds in my cheddar looked the way they did,because I didn't use calcium chloride and I used store bought milk?

There are conflicting schools of thought on this.

Since I use pasturized, homogenized milk, i always use it.

Some don't.

Then I may need to use it,I like the pictures of your cheeses,they look really nice,I know that has to do with more than just using calcium chloride in your milk,but I think if you want to be successful,immitate success! ;D
