Opened a raw milk Beaufort today---made 3-29-15----once again got some small eyes-----think I should eliminate the small amount of p. shermani from recipe-----the cheese is excellent-----wonderful taste, smell and texture and it melts really nice, microwave and pan fried.
I'm going to have to try aging one of these out longer and see how that turns out---patience isn't my strong suit
