I just ordered some for really real cheese wax.I have to rewax my two cheese wheels.I used regular parafin wax when I first waxed them.After about three weeks now,the wax has cracked and started falling off of them.So in a few days when the wax gets here,Ill be rewaxing my cheddar and pepper jack.I was wondering,I realized after I had already waxed it,that I had forgotten to brine my pepper jack as per instructions.Is it ok to do this now that the wax is falling off of it before I rewax it?Or will it even make a difference at this point? All screw ups considered,the pepper jack sure does smell good!It smells just like what you would get in the store!The cheddar kinda smells like feet,though.I'm not too hopeful of it,but it's only about a month old,so maybe that's just a 'young cheddar' smell?

Go ahead and brine it. The cheese absorb some salt everytime they get washed and it helps to kill any mold thay might try to grow too.
