I am in the process of getting my cheese plant licensed. I haven't been on the forum for a while because I have been very busy building and fixing trying to please the inspector.

The top picture is my vat that holds 150 gallons to the back is my new lever presses. There is also a draining table on the left for dishes. The second pic is my sink, and the third is my new aging space. It is buried underground.
