Kind of neat video of aging, wrapped Cheddars.  http://www.wookey.co.uk/360-cheese.htm

I want that cave in my backyard. ;D

Wow, to be surrounded by cheese and cheddar at that! Mouse & my heaven. I'm not scared, unless all the lights go out, and then, who knows . . .

Question, so what
aren't there any mice
or at least insects attaching all that open produce?

Cool video John.  What does keep all the creepy-crawly things off the cheese?  Perhaps it is just part of the flavor. ::)

I think that it is all part of the flavor.  Here are Cheese Mites in action, perhaps making Mimolette cheese.
