And it's a big one....!

Okay, somehow 4.5 gallons made 7.2# of cheese.... PH went a little fast on pressing, but all other targets were met. I like the manchegos (hispanicos) at about 3 months, but this one will need to go longer I think. This is the biggest cheese I have made yet...
