Pink in Gorgonzola
« on: September 25, 2015, 11:36:52 AM »
I made a recipe for gorgonzola that ended up making quite a bit more curds than I was expecting, as such I split the remaining curds between a few smaller molds. Throughout the aging i have pulled and consumed each of the smaller cheeses but when I cut open the larger main wheel I found these strange pinkish/almost magenta-y patches within the paste. (it is a bit difficult to see in the pictures) I just want to be sure they are safe to eat. In my research i have seen both that it is fine and normal as well as it is possibly harmful. In the mean while i have wedged and vac-packed the wheel and am storing in a refrigerator.

Any information as to what this could be would be helpful.

Thanks, Aaron
