At this point, though, I'm not sure what it will be. Last night I took a gallon of goat milk and added MA011 and Geo to it, stirred it in thoroughly, and forgot to add the rennet. This morning, I realized what I had done, and added 2 drops of double-strength rennet, stirred it in well, and covered it. The milk was already semi-coagulated because of the cultures.
I guess at this point I'll play with it here and there and see what I come up with. Maybe it'll be crottin-like, and maybe it won't. I have plenty more milk, a never-ending supply it sometimes seems, so I can try another batch tonight, but I'm wondering what this will turn out to be, or whether it really will be crottin-like. Lots of possibilities to play, once I'm out of the box.
