Mystery starter

At least it is a mystery how I will use it! Artisan Geek accidentally sent me a packet of ST-B01 instead of FD. Has anyone been using this product? If so, what are you doing with it? Since it is ST I would guess it might be used for acidification along with something else...

Product Description

ST-B01 is a multipurpose thermophile blend of Streptococcus Thermophilus strains.

The culture is used primarily in soft mild cheeses with little or no post acidification; Robiola, Stracchino/Crescenza, Swiss types, or stabilized bloomy styles such as Camembert or Brie. This culture can be used on its own, as an adjunct, or blended with other cultures to make Emmental, Tomme, Cheddar and other continental cheeses. Very long shelf life and excellent phage resistance.

Sold in individual 50 U sachets or discounted creamery size cases of 30x 50 U sachets. Made in Denmark or France.

Thanks John, I had read that since I needed to find out what it was. But if someone has some experience using it I would really like to hear about that!
