So 2 months is up.. and the result is in!

There is only a hint of sharpness in the taste, and it is a bit whiter than I expected. I've kept half for eating and waxed the other half to age for another couple of months to see if it is any better. A little bit of time out of wax before I taste a bit more.

Rather chuffed as to how it went, it's edible and while not the flavour I wanted it's a starting place!

So, moral of the story, if your cheese looks like this after pressing don't despair! You can still end up with a cheese at the end :)

My motto is, if it is edible, it is a success! AC4U.

BTW, it should get better with more age -- cheddars need 6 months to really start to shine, in my experience.
