First Stilton

Every quarter or so, we do an "International Dinner Night" with a bunch of friends. We choose a country and make (as much from scratch as possible) the classic foods from that country. This time it's "England" and so I decided to make a Stilton. I used the recipe from Karlin's "Artisan Cheesemaking At Home".

So far it seems like everything went well; unlike last weekend when I forgot the MA4000 culture (DOH!). I just got done rubbing and smoothing the outside. Now it's into the cave to grow some mold.

Interesting, that's the smallest blue I've seen next to a cambozola.  Should be interesting to watch develop. ???

Well, we cracked the Stilton open on Sunday and here was the end result.



The "blue" mold was more of a grey-brown, it tasted just like the Stilton I bought from the local cheesemonger (I had never had Stilton before so I bought some a few weeks ago for comparison), over 1/2# was consumed with gusto in little more than an hour, and even people who claimed "I don't like blue cheese" came back for more. So I'm calling this a success!

Looks fantastic.  I especially like the nice clean skewer line of blue mold and the vericose veins around it :D

Great looking cheese  :). I am 2 weeks into my first Stilton and I can only hope that it comes out looking like this one.

Ahhh , the blues , my favorite cheeses , funny , I find that most people think they don't like blue cheese , and once you get them to try some , they like it !
