Duntov's Blue Dressing

Here is one of my versions of Bleu Cheese Dressing.

1 Cup Mayonnaise (Dukes or Hellmann’s)
1/3 Cup Sour Cream or Crème fraîche
1 Cup Crumbled Bleu Cheese (Home made of course)
1 Tsp. Balsamic Vinegar
½ Tsp. Lemon Juice
½ Tsp. Celery Seeds
2 Tsp. Honey
1 Tsp. Cracked Black Pepper
Buttermilk to thin if needed

More honey can be added to the likes of the younger crowd but take care as it can go too sweet very fast.  I personally like more pepper in mine.  The key ingredient however is the balsamic vinegar that gives it a rich smooth trait.

You need to throw some of that blue into a processor with some sour cream to pour over steaks!  :P  AC4U for your outstanding dressing!! :P

Thanks for the cheeses guys.  I will give your suggestions a try Al.  I wonder how Bleu would pair with horseradish?  Hmmm......
