Cheddar made some awhile back

This is the last one. Made the Cheddar in late 2014, it has turned out very nice. Wife has been telling me to make more, we all liked it.
It took a while to make with the cheddaring.

Awesome stuff ... It may seem cheddar takes longer based on all the extra steps .. But consider that one does not have to wait to finish the cheese with brining ... I say the time to make is shorter :)

I bang off a 4 lb white cheddar every month ... And crack them open at 8-14 months ... Any more I'd have to charge them rent :)

I should do that, began making Cheddar again, it does seem take a while to do a ring.

It is hard to be patient for such a long aging process.  I am sure the results were worth it.  How was the taste and texture?  AC4U.

Now that is funny.  The clicking of the oven light reminds me of how often I use to open the cave door just to look.  It also was the primary reason for condensation in my cave.  lol

Just a basic wine cooler with a mini humidifier and reptile controller.  I want to get another just for my blues.

Thanks Duntov, Nice!. In the mountains we have a cellar, I've aged some in a wire basket in with the wine.
