whey on top of yogurt

Hi.  I always get a little whey on top of my yogurt but sometimes I get heaps and heaps...does anybody know what is going on here?

Nothing to be concerned about, it's just the solids separating from the liquids... It happens to my yogurt all the time too. Just pour it off or mix it back in... If it's really something you want to avoid ... Simply put the yogurt in a fine strainer (don't worry, it shouldn't run out) cover with plastic and let it drain over a bowl over night.. Put back into clean bowl... Stir.... Presto! Non watery 'Greek yogurt' :)

One thing that makes a difference in my experience - avoid disturbing the curd while it is still warm from the incubation period. Don't stir it or let it break up until it has chilled thoroughly in the refrigerator. I don't know why this makes such a difference, but for me, at least, it does!

The quicker one cools prepared yogurt the smoother and silkier the mouthfeel will be ... I put my 1L jars in the freezer for 1/2 hr immediately after incubating period (8-9 hours).  And ya..as awake' says.... Don't disturb the still warm yogurt :)
