Congratulations it a baby... Swiss

Had to clean the cave because it was getting way too hot, and I had to put an ac unit in.  So I loaded up all my cheeses into containers so they wouldn't get crap all over them and didn't think and stacked my baby Swiss three deep in a bucket.  Opened it up today and found that I had cracked the bottom two rinds stacking them like that so I cut them open.  The have a lot of holes but the could use some more aging.

Too bad, cutting into them early ... Guess you'll have to make another batch :)

Looks good though ... I'm probably making mine soon too.

I thought the crack would just let in mold.  Also I am always curios about Swiss eyes.  It's my obsession.  I guess it will be a 4 th of July present for anyone I see.
