Duntov, That/those cheeses look wonderful, so glad you posted pictures.

The pictures of: the Cooked and Non cooked show a bit of a difference, I'll have to go back and read how they differed in taste and texture.

Best of luck to you and a good wine, bread and maybe some olives to go with that cheese..

With the real Stilton they wrap it in foil to deprive it of Oxygen, for the last few weeks of its life, I think.

Here are the only makers of true Stilton:

A: Colston Bassett Dairy

B: Cropwell Bishop

C: Hartington Creamery

D: Long Clawson Dairy

E: Tuxford & Tebbutt Creamery

F: Websters

I have tried to find and watch all the videos related to these makers.  Of the ones I did watch, I never saw any bagging or foil wrap except when it was time to cut and sell.  If you have something showing differently, please share.
