Hello everyone!

Found this forum a couple weeks ago. Loving everything I've seen so far. Hopefully I'll have something to contribute beyond questions soon.

As for my experience, I made my first cheese, a Feta, back in early 2010. A short while later I made a sort of Colby but didn't have any where to age it but in a food container in the fridge with almost no humidity control. Both the Feta and the Colby came out edible, so  I'll take that as a win. Didn't make anything else as I really wanted to make the cheeses that require proper aging.

Fast forward 6 years, and I've got the bug again. Made another Feta to get back in the rhythm. Picked up the parts to make a small cave and I'm ready to make the cheeses I always wanted to. Got a Blue Stilton planned and will start it when the mould arrives. After that comes a Munster, Brie, Camembert, and anything that doesn't require pressing beyond a bucket with heavy things inside. I'll need a press at some point too.

Anyway, nice to meet you all.

Welcome Damian! New here too but I wish you the best. Your Blue Stilton sounds great. Here's to many more cheeses!

Thanks for the warm wishes. Stilton is on hold as the order with the molds is being delayed. Nothing like 2 and a half weeks for a domestic order  :-\

Please to meet you Damian!  Partly because my Grandson's name is Damian, partly because we love new members here, and partly because I love your dunes!!!      https://www.facebook.com/al.lewis.372/videos/vb.1506946266/10207083483474617/?type=2&video_source=user_video_tab

I've actually only been to the dunes once since moving here. Not a huge fan of climbing in sand; oddly enough I prefer mud, which there is plenty of here. My favorite place is this one small beach south of Coos Bay on Cape Arago highway called Sunset Bay. My dog, a golden retriever, absolutely loves it! Plenty of surf, sand, and even a stream to run through. People wonder why I keep a stack of towels in the car and the seats are always sandy.

Nice place! :)

I also love the sea and have the same pile of towels in my car. ;) I bought a cheap plastic seat cover that I use after a swim.

Love your dogs. We had a black cooker spaniel named Misty when I was a kid. Great dog, but now that I have Mandy, I'll never have anything but goldens.
