Cheeses to make using Lemon Pepper
« on: December 15, 2016, 02:03:23 AM »
I picked up a packet of dried Lemon Pepper spice today at the grocery store. I am considering making a cheese this weekend and include the Lemon Pepper right before pressing the curds. Does anyone have a cheese style to suggest. I'm thinking semi-hard to hard cheeses not soft cheeses. Appreciate any suggestions.

Mike

I'd be very cautious about including anything in your cheese that can't be sanitized by boiling prior to being added to the milk or curds. No way to know how the spice was handled (or by whom) prior to packaging. :o

There's sugar and salt in there as well, which could be detrimental to a satisfactory cheese make.

Let's ferment something!
Bread, beer, wine, cheese...it's all good.

Thank you Boofer for the insights. I'll definitely skip using this ingredient. Happy I asked. A cheese for you  :)
