Edam problem and maybe failure

Hi,

Opened in half my first Edam, made nearly 3 months ago. It was waxed and started swelling. Cracked and I had to relax to a couple of times. Anyway, I cut it in half, it is very small the normal yield for 1 gallon of milk, which is my maximum here. The picture says it all. It smelled good, texture was good. Tender. However it tasted off, horrible.

I put the two halves together and vac packed them and put them back in the wine fridge. I am going home for 6 weeks, so I will see if it improves.

Any suggestions?

I would let it air out for a day or two then pack the two haves separately.

Looks to me that you may have had a "blowing" problem - something I have never yet experienced, so don't have much useful info to suggest, but you might do some searching here for "early blowing" and "late blowing" and see if what you have matches. After 3 months of aging, off/horrible taste is not encouraging that it will ever improve. :(
