They need to go Au Naturale until you have a good layer of mold. One simple approach is to place them on a bamboo sushi rolling mat to allow aeration.

Well, the mold never really fully grew out.

Nonetheless, the Camembert did mature at 4 weeks old. I also cut the Cambozola a week early since it was rapidly softening on the surface so there's still a solid core left.

Thanks for the cheeses! As this was my first aged cheese, it was quite a nerve-wracking experience. The rind ended up a bit strongly ammoniated to the nose but it was personally something I enjoyed eating.  ;D

Can't wait to try a similar build when my PC and GC cultures arrive!

I'm designing an incubator/ripening intelligent box that have heater, refrigerator, moisturizer, CO2 and O2 sensors. This box can rise temperature to 45c or decrease it to 4c. furthermore it has a moisturizer that can adjust RH and its CO2 and O2 sensors can show gas levels in the box. It can be applied for producing of yogurt and kefir or ripening of different cheeses. Pray to finish it sooooon.

Artificial intelligence - I am very familiar with that. According to my wife, all of my intelligence is artificial at best ... :)
