Cheese with Coriander

Has anyone made a cheese with coriander? I would like to try making a cheese with coriander. I was thinking a butterkäse but I'm open to anything. Do you think I could just boil some coriander seeds and add them to the curds before pressing?

I am looking forward to it. Butterkase is so easy to make and rewarding in terms of bang for your buck and time efficiency.

Consider gently roasting the coriander seeds rather than boiling them.
If done that way, and perhaps just cracked open in a mortar and pestle, you might get a better flavour profile.

I made it yesterday. I toasted 3 tablespoons of coriander seeds and then crushed them with a mortar and pestle.  After taking it out of the press it smelled me what I can only describe as a coffee smell. I thought it smelled pretty good. I'm planning letting it mature for 6-8 weeks. I'll let you all know how it tastes!

It's around 2.4 pounds. I used a 10 quart recipe.
