Agreed! If you really want to put something on the wood, the best choice is pure food-grade mineral oil - this is non-reactive and odorless. But it really is not needed or desirable for the cave shelves. I do use it on my wooden press from time to time.

Thank you all for your valuable advice, help and guide. I leave the wood neutral or natural, I take every 6 months with brine to remove the bad bacteria and let it dry in the sun or in the open air, I like its kind of support for the bottom and from the top. Thank you all again, great respect.
