First Cheese! Havarti

Hi all! I've been lurking (and learning) on this site for awhile now and figured it's time for me to start posting! I've been wanting to make cheese for a long time coming now and finally worked up the courage to start this summer. I've made plenty of fresh cheeses, but this is my first attempt at an aged cheese! I made it with raw cows milk (lucky, I know) about a month ago, and the recipe used was from Gianaclis Caldwell's Mastering Artisan Cheesemaking book (same temperature light brine washed curd cheese). The flavor profile didn't turn out exactly as I wanted, but I was a dummy and forgot to calibrate my pH meter before the make (realized after the fact). It's still very edible and actually pretty tasty though, so I count it as a win    ;D^-^

Any time you can eat it, it counts as a success. You can always claim that you were inventing a new style of cheese!

I too say that that any eating worthy cheese is a success.

Looks great and have a cheese from me.  You are lucky to be able to buy raw milk that is produced in facilities that are inspected by the Feds.  I can buy raw milk in my state but it is labeled 'for animal consumption only' and come from dairies that are self monitored.
