Tilsit #1 with Caraway

This is my first attempt at a Tilsit and I decided to kick it up a bit with caraway seeds.  The recipe is from cheesemaking.com but I upped it to a 4 gallon make.  It was aged for three months.  Very nice taste but just a little shy on the salt.  The red color from the B. Linens is just amazing on this one.
