I have lived here my whole life.  Dairy farms all around.  At this stage of life (68) I want to learn to make cheese.

Hello there! Welcome to the forum. Cheesemaking is a perfect retirement hobby. It's slow, meticulous, complex, interesting, and tasty :)

There are a lot of great guys and gals on here and a lot of archives that you can go through.

Let us know what you're going to try and make first and take pics if you can.
