Can Pasteurized Homogenized Milk be used to make cheese.

That is all I can find.  No farmers want to sell raw milk, worry about the laws.

Yep, you definitely can.  I usually use Lucerne milk from Safeway, but you may have to try several different brands before you find one that works satisfactorily for you. I went through three or four brands. Just avoid ultra pasteurization. That stuff won't work at all. 
You also have to be more attentive to pH.  So if you don't have access to a pH meter it might take a couple attempts for a given recipe to figure out timing. Hope this helps.

No matter what store I go to in Athens, GA all I can find is ultra-pasteurized.  What do I do now?  I want to make cream cheese

You can find it at Walmart Superstore in Athens.
