So I answered my own question and found someone who makes custom curd cutters since I've been unable to reach John from PC.
He's a nice guy and he's based in Maryland. He says he's been making cheese for around a year. I invited him to the forum but here's a link if anyone's interested. He responds really quickly.

Hi all,
I have a curd cutter from Lukasz at cheese kettle. It is fantastic.
Well worth considering if you are in the market for a curd cutter or any other stainless cheese associated items.

I just discovered the same guy on Etsy and am going to have him make me a dual cutter - horizontal and vertical cuts at the same time.
