Cream Coating not dry
« on: January 28, 2018, 07:55:37 PM »
I am having issues with the cream coating I purchased from The CheeseMaker.com.
It has been two hours sense I coated two cheeses on one side and it still isn't dry.
I have had the cream wax about one year.
Does this go bad?

If you put it on too heavy and/or live in a humid environment, it takes a fair amount of time.  I don't think it goes bad.  Use multiple thin layers instead a just one or two heavy coatings.  You can put in in the refrigerator and it will dry faster due to the dry air.  On my large cheeses, it can take two days to get a proper coat applied.

Thank you John. I will put them back in the cave and wait until tonight and maybe they will be dry enough to re-coat.
I put a very thin layer and room temp. / humidity is  74F / 45%H
