How to get British-like Cheddar cheese in Chile

Hi there!

I am a Chilean living in the UK. By far the best thing for me about the UK is the cheddar cheese ;D. Unfortunately, there is no such cheese, or closely related cheese in Chile ???. Because cheddar is by far my all time favourite cheese, I would like to somehow get it in my home country, when I move back, in a few years. I am considering the following options:

1) Importing it from the UK

2) Making it myself

Regarding 1), this cannot be done via airplane baggage, because the Custom agency in Chile is very very strict about importing food. It will be taken away from me (and if not declared, penalties go from fines to jail). So the only option on this respect is to use a company to do so. However, I have not been able to find companies specialising in importing low scale level of refrigerated food for personal use. Are you aware of such companies?

Method 1, if possible, might be quite expensive, given that I do not plan to buy a ton of cheese.  :( Thus, method 2 seems the best. But, as someone who has never produced cheese, sounds daunting. But who knows, might well be rewarding! Would it be however much cheaper? Given all the tools, energy and time involved. And might not be good tasting after all.

What would you recommend? Is there a third option that I might be missing?

Welcome Perico!

Cheddar is my favorite cheese to make. It's more fun for some unknown reason and it's always a win with freinds.

I make a white Leicester with repeatable results . There are other recipes. Find one that suits you.

I get 1400 gram wheels from 12 liters store bought milk.

You could spin up in a month or two if cheddar was your only focus.

Hi,
I'm new to cheese making and this forum but have made 2 batches go what I hope to be cheddar in a few months time. The process wasn't hard at all and I have made small batches, 6l of milk which has given me about 650g of cheese each time. Really doesn't cost much, especially once you have a press and moulds, the cultures, milk, wax, rennet etc are inexpensive. Luckily we have jersey cows so we don't pay for milk.
I would defiantly say give it a go.

Mind you is does take 18 months -2 years to become exceptional.  For something easier and matures faster then I'd recommend a Caerphilly.

Wow such a lot informations , but Do you use cheese press steel for this ?
