Gouda with Chilli, Garlic and Lipase

Not for the faint of heart, this one is a bit feisty.
9 Months old, texture more like a Havarti than an older Gouda (I like that, so no problem).
Ground garlic and crumbled dried bird's eye chilli, with Lipase added with the culture.
Quite attractive, dominant smell of garlic with the "Italian" cheese coming later, chilli not really noticeable until the afterburn hits.
Nice big flavour, put away now for sharing with big red wines or lots of beer.
