Hello everyone!!!

Just introducing myself to everyone.  Signed up sometime back, but didn't get to participate much.
Have been making simple cheese for a couple of years now.  Was originally taught by an Italian lady which got me bitten by the bug.  Unfortunately where I used to get my fresh milk from is no longer in business, so I am stuck with store bought milk, which is just not the same.
Anyway hope to get to know everyone, and learn lots.  I know I have quite a few questions.

As you've been making (simple) cheese for a couple of years I'm hoping you can also advise.

I'm mostly Canadian eh but live and work in Houston Texas, ya'll welcome!

Well I don't know that I could give much advice, as I am still learning myself.  Started making a cheese using junket tablets.  When they went off the market I decided to dive in the deep end, and get some of the real cheese making products.
What I have made so far is feta, cottage cheese, ricotta, caerphilly, halloumi. I have also made brie and camebert, but was enable to keep them at the proper temps, and they went off.  I really need to invest in a wine fridge of something similar.  I have also attempted to make mozzarella, but I couldn't get the curd to stretch.  Everything went fine up to that step.  My version took a long time, not the 30mins that I see some say, so it was disappointing to get that far and not have it turn out.
I really want to try it again, but an hesitant as I don't want to waste that much milk again.
So there's my journey so far.

Tea, you can get Junket brand rennet here in US direct from I think the manufacturer here, I've also seen it on EBay US. But sounds like you have another source . . . congrats on the successful cheese and on trying several. Especially the camenbert, brave!

It seems like for many of us being able to get the right temp and humidity for aging is the toughest part. My only try at Mozzarella also didn't work. FYI I've posted links to some YouTube videos on cheese making on the website here.

Thankyou for that information, I can now buy junket tablets here too, but only at specialised stores.  I have purchased liquid rennet, so for the time being that suits me better.  I can regulate the amount I use better.

Now that I have found a decent milk to use, I am thinking of giving mozarella another go.  Will let you know what happens.
