Success!!! Sort of....

After 3 months aging time,I cut open what was supposed to be pepper jack.Due to poor planning,though,it turned into pepper parmisan!I had originally waxed it with plain 'ol parrafin wax,which cracked and flaked pretty bad,so I just remmoved it all as I was waiting on my actual cheese wax to arrive.In the time it took for my cheese wax to come in,it dried and got rock hard.I figured it was ruined,but decided not to throw it away and just see what happened.Well,after a while it started to smell more and more like parmesan everytime I walked by it.Finally yesterday,curiosity got the better of me,and I figured I'd do an autopsy,taste it and then throw away a ruined cheese.Turns out,it's the best tasting parmesan I ever tasted!The only thing wrong with it was that there wasn't enough of it! ;D

Of course it got all moldy,but I didn't eat the mold.


It had a very nice looking natural rind,though,that was quite tasty!



But the real treasure was in the heart of the little cheese wheel!I've never had a store bought cheese that tasted this good!



So in the end,it turned into a fabulous disaster! ;D

Sorry about your disaster Road Rash. Hmm cheese smells like Parmesan. Are you making a new one, i bet you do.
Hopefully the next one turns out very nice.

Looks good to me!  Whether it turns out as originally planned or not, as long as it tastes good and you are happy with it, that is what counts.

I still haven't taken the time to saw into my nearly a year old "real" parmesan, but discovered that a couple of the cheeses I made this winter taste just like parm.  They are incredibly dry and grate well, plus they were easier to make than the parm recipe.

Hey yu know what they say  ... I recipe is just a guide. Use it abuse it and make it your own! There's no one rght way to make cheese! I'll bet a lareg percentage of these new designer cheeses were accidentaly discovered and someone ran with it.
