Neophyte in Louisiana

Not sure I'll ever be able to do anything but fresh cheeses, being in a hot climate with no caves (and lacking space in my condo to create a reasonable facsimile), but this looks like the place to start learning, so here I am. :)

Looking forward to reading everyone's experiences and getting ideas!

Hello Selene in Louisiana and welcome!

I'm next door in West Houston and have similar problem, several others here also from LA & S Texas and few from N Queensland Oz with similar climate, plus there is a member in Singapore that has high temp & humidity all year round!!! So it is feasible. Lots of ideas in the Equipment - Aging Board.

That said, soft unaged cheeses need less equipment and you get quicker results, so easy way to start.

Welcome Seline. I here you about small places. I can talk on my phone (corded) anywhere in the house. I found a mini cave that sits on top of my microwave. It's been working very well for me.
