Limburger aging help

I am new to making cheese and need help to make a homemade container or enviorment to age limburger. Yall probably know it has to be at 50-55 degrees F and 90-95% humidity. All responses will be appreciated.

Based the the "yall" I will guess you are down south somewhere. I frigerator can be modified to control temperature pretty easily by adding a Johnson controls temperature controler. Humidity is more tricky. I tend to hang damp/wet cheese cloths with an end in a small bowl of water to increase humidity.
