Baked Stuffed Chicken Breasts

One of my favorite quick meals is baked stuffed chicken breasts. I use frozen chicken breast that I always have in the freezer. You know the kind that flash forzen and come like 8 or 10 to the bag?

Take a breast and slice it sideways - butterfly it. Don't cut all the way through though. Sprinkle some spices on it. Garlic is a must! I also use a lot of cajun Spice, salt and pepper.

Lay on a few slices of cheese. I like provalone the best but all I had left was a few slices of muenster - it works. Then crumble up some cornbread, dice some peppers, onions and celery and mix it up with a litle water or applesauce. Through that on top of the cheese and fold the breast back together. Spnkle top and bottom with spices and crushed crackers. Drizzle with EVOO.

Put the extra stuffing in a tinfoil packet and at about half way through the cook spill in some chicken grease.

Bake it at 350 for about 30 minutes or until you get an internal meat temperature of 170F degrees.
