Two new Gouda Cheese making videos on YouTube, this one is of automated equipment in a German Dairy using Kadova brand molds:
Gouda cheese production using a prepressing vat

This second video is of a Salmon Arm, BC, Canada Gouda Cheese Making operation using some of the same equipment and again, Kadova brand molds:

They make it look easy!

The use of pneumatics in the German facility is interesting. They appear to be pressing under whey on the draining table with a drop in place double cylinder pneumatic setup.

Nice videos! They really do make it look easy. I need to find a way to incorporate some of their techniques on a much smaller scale.
