and I just left Dairy Connection a week ago with a big box of stuff. Never planned on needing that again. Oh well maybe I should get a big packet this time.

I'm also trying my hand at a Limburger type cheese...actually, the recipe is for brick, but I am not washing the rind...it's a deep orange and smells wild!  I am also having the same problem with blue mold trying to make a home on my orange cheese.  Every day, I take a paring knife and carefully pick out any tiny blue spots that I see.  I hope it works.  (Fingers crossed.)  The first wheel will be ready around Thanksgiving.  I'll let you know how it comes out and try to take some pix and post.

I'll bet that your cheese still tastes great!  Frankly, I think the blue veining makes it all the more interesting...and more colorful!

Thanks for the post. I've been wanting to try that as it is one of my husband's favs. I've been intimidated but think I'll do it.
The blue looks good in it, too. Kind of like "Limbazola"?

Oh my!   :o That is the worst report I have ever seen on this cheese. Sounds worse than boiled okra!

It was funny. Well If I only make a small one and only eat it young maybe it won't kill me. I am like the proverbial curious cat on this one. I just have to try it. Hopefully like the cat satisfaction will bring me back!  ::)
