So last yesterday I splurged and ordered a bunch of kit from Dairy Connection Inc. The main reason is to try making Camembert:

I ordered the hot shot fast shipping as from the website, cultures shouldn't be left too long outside fridge. Yep expensive compared to buying them but you only go around once.

The open ended camember molds are only 4.25" diameter, small, I figure 5 should be enough for a 2 US gallon batch. I figure the fine mats are 1 square foot, so I'll cut them into quarters which hould be big enough for the hoop ends.

Your getting right into this.  Looking forward to seeing how it goes for you.

I have yet to make a soft cheese like that.  At least on purpose. ;D

Looks like hard work but the detailed equipment-materials-directions recipe I built should help. If successful then I'll be making lot's of reg's Brie & Leek Pizza!

As that detailed recipe has pH points during the process I also broke down and ordered a digital pH Meter off ebay.com in USA for USD24 shipped called:

I know it's a bump, just wanted to add my praise for these guys.  We now live close, and the couple of times I've been to them, they are all really helpful, exceedingly nice folks.  Definitely earned my trust and goodwill.
