Reza bey, Bereket TV'nin konu hakkında bir videosu var. Aldığım notlar şöyle
Çömlek Peyniri
Nevşehir Özyayla Köyünde yapılır.
Toprak testilerde bekletilir. İnek sütünden, termofilik kültür kullanılarak yapılır.
38 derece süt sağıldığı anda mayalanıyor.
38 derecede termofilik maya ile 1 saat olgunlaştırılabilir.
30 kilo süte 10 gram maya eklenir (maya çok fazla bence)
Teleme 15 dakikada oluyor.
Teleme kesilir ve 15 dakika kaynatılır
Keseye doldurup süzülür
Ağır taş altında 24 saat baskıya alınır
Kalıp haline gelen peynir ufalanır
Tuzlanır. %2 oranında tuz yeterli olacaktır.
Keseye doldurulur ve taş altında 24 saat baskılanır.
Ufalanır ve çömleğe basılır. İyice sıkıştırmak gerekir.
Üstüne 4-5 kat temiz steril bez basılır
Ters olarak bir mağarada toprağa gömülür.
3 ila 5 ay olgunlaştırılır ama 7 aya kadar da olgunlaştırılabilir. Ama uzun süre olgunlaşan peynir itili (keskin aromalı veya acı) olur.
